ingredients
- 4 sand dabs fillets (about 1 lb)
- 1 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 2 eggs
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon lemon zest
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying
steps
- 1.
Rinse the sand dabs fillets under cold water and pat them dry with paper towels.
- 2.
In a shallow dish, combine the panko breadcrumbs, flour, parsley, dill, lemon zest, garlic powder, salt, and black pepper.
- 3.
In a separate dish, whisk the eggs until well beaten.
- 4.
Dip each sand dab fillet into the beaten eggs, ensuring it is fully coated.
- 5.
Press the fillet into the panko mixture, gently pressing the breadcrumbs to adhere to the fish. Repeat for all fillets.
- 6.
In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
- 7.
Carefully place the fillets into the hot oil and cook for about 2-3 minutes per side, or until golden brown and crispy.
- 8.
Once cooked, transfer the fillets to a paper towel-lined plate to drain any excess oil.
- 9.
Serve the crispy panko crusted sand dabs warm, accompanied by lemon wedges and a side of tartar sauce or remoulade.
