Crispy Shepherd's Surprise

- 1 lb ground lamb or beef
- 1 onion, finely chopped
- 2 carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 2 tbsp fresh parsley, chopped
- 4 cups mashed potatoes
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs
- Vegetable oil, for frying
- Salt and pepper, to taste

In a skillet, brown the ground lamb or beef over medium heat. Drain excess fat and set aside.

In the same skillet, sauté onions, carrots, peas, and garlic until tender.

Add the tomato paste and cook for 2 minutes.

Stir in the cooked meat, beef broth, Worcestershire sauce, salt, and pepper. Simmer for 10 minutes. Remove from heat and stir in the parsley. Allow the mixture to cool.

Take a small scoop of mashed potatoes and flatten in your palm. Place a spoonful of the meat mixture in the center and fold the mashed potato around it to form a small ball. Repeat for remaining mixture.
