Crispy Zucchini Fritters

These Crispy Zucchini Fritters are a perfect vegetarian side dish for burgers. Made with fresh zucchini, they are golden brown and crispy on the outside, while soft and flavorful on the inside. A hint of garlic and a sprinkle of parmesan cheese elevate these fritters to a whole new level of deliciousness.
ingredients
- 2 medium-sized zucchinis
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 garlic cloves, minced
- 1/4 cup grated parmesan cheese
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- 2 tablespoons olive oil, for frying
- 1/4 cup Greek yogurt, for serving
- Fresh basil leaves, for garnish
steps
- 1.
Grate the zucchinis using a box grater and place them in a colander. Sprinkle with salt and let them sit for 10 minutes to remove excess moisture. Squeeze out any remaining liquid.
- 2.
In a large bowl, combine the grated zucchinis, salt, black pepper, minced garlic, grated parmesan cheese, flour, and beaten eggs. Mix well until fully combined.
- 3.
Heat olive oil in a large skillet over medium heat. Scoop 1/4 cup portions of the zucchini mixture onto the skillet and flatten them gently with a spatula. Cook for about 3-4 minutes on each side until golden brown and crispy. Repeat for the remaining mixture.
- 4.
Transfer the cooked fritters to a paper towel-lined plate to absorb any excess oil.
- 5.
Serve the Crispy Zucchini Fritters warm with a dollop of Greek yogurt on top. Garnish with fresh basil leaves.
