Nutty Banana Energy Bars
ingredients
- 250 g ripe bananas, mashed (about 2 medium bananas)
- 125 g almond butter
- 70 g mixed nuts (walnuts, almonds, pecans), chopped
- 60 g honey or maple syrup
- 5 g vanilla extract (approximately 1 teaspoon)
- 2 g cinnamon (approximately ½ teaspoon)
- 1 g salt (approximately ¼ teaspoon)
- 45 g dark chocolate chips (optional)

Preheat your oven to 175°C (350°F) and line an 8x8 inch baking pan with parchment paper.

In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract until smooth.

Stir in the chopped nuts, cinnamon, and salt until evenly mixed.

If using, fold in the dark chocolate chips for an added treat.
- 5.
Pour the mixture into the prepared baking pan and spread it evenly.
- 6.
Bake for 20-25 minutes or until the edges are golden and the center is firm.
- 7.
Remove from the oven and let cool completely in the pan before lifting out the parchment paper and cutting into bars.

Store in an airtight container at room temperature for up to a week or in the fridge for longer freshness.
