Rich, chocolatey muffins with a hint of coconut sweetness. Perfect for an indulgent breakfast or dessert!
ingredients
- 2 cups gluten-free self raising flour mix
- 1 cup coconut sugar
- 1/2 cup cocoa powder
- 1/2 cup coconut oil, melted
- 1 1/2 cups unsweetened almond milk
- 2 tsp vanilla extract
- 1/4 tsp sea salt

Preheat oven to 350°F and grease muffin tin or use muffin liners.

In a large bowl, whisk together flour mix, cocoa powder, coconut sugar and sea salt.

In a separate bowl, whisk together melted coconut oil, almond milk and vanilla extract.

Add wet mixture to dry ingredients and mix until just combined.

Pour batter into muffin cups, filling each about 3/4 of the way full.

Bake for 20-25 minutes, until a toothpick comes out clean.
- 7.
Let cool in pan for 5-10 minutes before transferring to a wire rack to cool completely.
