Decadent Truffle Chocolate Cake

- 3/4 cup unsweetened cocoa powder

- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup heavy cream
- 12 oz semisweet chocolate, chopped
- 1/4 cup butter
- 2 cups heavy cream
- 16 oz semisweet chocolate, chopped

Preheat oven to 350°F and grease three 9-inch round cake pans.

In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add eggs, milk, oil, and vanilla. Mix until smooth.

Stir in boiling water. Batter will be thin. Pour evenly into prepared pans.

Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes, then transfer to wire racks.

In a saucepan, heat 1 cup heavy cream until hot but not boiling. Remove from heat and add 12 oz chocolate. Stir until smooth. Cool to room temperature.

Whip 2 cups heavy cream until stiff peaks form. Fold in 16 oz melted chocolate.

To assemble, place one cake layer on a serving plate. Spread ganache, then mousse. Repeat with remaining layers.
