Decadent Vegan Black Bean Brownies

ingredients
- 1 can (15 oz) black beans, rinsed and drained (approx 1 1/2 cups)
- 1/2 cup unsweetened cocoa powder
- 1/4 cup unsweetened soy milk or any plant-based milk
- 1/2 cup maple syrup (or 1 large banana)
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/2 cup dark chocolate chips
- Option: replace soymilk with flax egg. (Mix 1 tbsp ground flaxseed + 3 tbsp water and let sit for 10 min to gel)
- Note: if not using maple syrup add 1 tbsp allulose/monk fruit sweetener

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

In a food processor, blend the black beans until smooth.

Add in remaining ingredients except chocolate chips and blend well.

Stir in 1/3 cup chocolate chips by hand.

Spread the batter evenly in the prepared baking pan and sprinkle remaining chocolate chips on top, pressing them lightly into surface.

Bake for 35 minutes, or until a toothpick inserted in the center comes out mostly clean.
- 7.
Allow to cool in the pan for 10 minutes, then set pan on wire rack to cool completely before slicing into squares.

Refrigerate overnight to further solidify.

Can be frozen then thawed on counter or in fridge overnight.
