Decadent Date Black Bean Brownies
ingredients
- 1 ½ cups cooked black beans, drained and rinsed
- ¼ cup unsweetened almond milk
- ¾ cup pitted dates, soaked in warm water for 10 minutes and drained
- ¼ cup unsweetened cocoa powder
- 2 tablespoons ground flaxseed mixed with 5 tablespoons water
- 1 teaspoon vanilla extract
- ½ cup oat flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ⅓ cup dairy-free dark chocolate chips

Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.

In a food processor, blend black beans, almond milk, soaked dates, cocoa powder, flaxseed mixture, and vanilla extract until smooth.

In a separate bowl, whisk together oat flour, baking powder, and baking soda.

Pour the black bean mixture into the bowl with the dry ingredients and mix until well combined.

Fold in the dark chocolate chips.

Transfer the batter to the prepared baking dish and spread it evenly.
