Easy Kielbasa Pasta Delight

This simple and delicious pasta dish combines flavorful kielbasa with sautéed onions, garlic, and juicy tomatoes, tossed with penne and spinach, and finished with a sprinkle of Parmesan cheese. It's a quick, budget-friendly option that can be easily made vegetarian by omitting the meat.

- 8 ounces (1/2 box) Penne Pasta
- 1 onion, chopped
- 3 medium cloves of garlic, minced
- 1 cup Kielbasa, chopped (can substitute with turkey sausage or omit for a meatless version)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 large tomato, chopped
- 1 cup spinach or mixed greens
- Salt and pepper, to taste
- 1 block of Parmesan cheese, grated

Boil Penne Pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add Kielbasa and stir fry until browned. Remove the meat using a slotted spoon and set aside.

In the same skillet, add chopped onion and minced garlic. If desired, add more olive oil and butter for extra flavor. Cook on low heat until the onions are translucent.

Add the chopped tomato to the skillet and cook until slightly softened. Return the cooked Kielbasa to the skillet.

If desired, add a little pasta water to the skillet for extra moisture.
