Easy Kielbasa Pasta Delight
"I didn't make the chicken. But, I did make an easy "make shift" pasta that Tim absolutely loved! -Boil 1/2 box of Penne Pasta -Chop onion and 3 medium cloves of garlic -Chop up about a cup of Kielbasa, could sub Turkey sausage or none at all. -add olive oil to pan and stir fry the meat, omit this step for meatless -pull out meat (hahahaha) ok, sorry - add the onion and garlic, I added some more olive oil and butter for taste -while that cooks on low, I chopped a big tomato - add tomato to onion and garlic once cooked -tomato cooks fast - add the meat back in -add little pasta water if you feel like adding more liquid - Drain pasta and add to mixture - stir well and heat through - add spinach or mixed greens - salt n pepper -grate block or Parmesan cheese over pasta and mix through. The cheese add some nice flavor and is a bit of a thickener. Could serve with some delicious bread Tim loved it. Simple, quick, cheap and could be vegetarian if you keep a few items out:) "
