Reduce the heat to medium-low and continue simmering, stirring occasionally, for about 10 minutes or until it reaches the soft-ball stage (235°F - 240°F on a candy thermometer).

Remove the saucepan from heat and let it cool for a couple of minutes.

Using a spoon or whisk, vigorously stir the mixture for about 5 minutes until it thickens and becomes creamy.
