ingredients
- 2 cups fresh rose petals (preferably organic and unsprayed)
- 1 gallon water
- 3 cups honey (preferably wildflower or clover)
- 1 cup pomegranate juice (freshly squeezed)
- 1 teaspoon champagne yeast
- 1 lemon (zest and juice)
- 1 teaspoon vanilla extract
- Optional: pomegranate seeds for garnish
steps
- 1.
Begin by gently rinsing the rose petals under cool water to remove any impurities.
- 2.
In a large pot, bring the gallon of water to a boil, then remove from heat.
- 3.
Stir in the honey until fully dissolved, creating a honey-water solution.
- 4.
Add the rose petals, lemon zest, and lemon juice to the honey mixture. Allow it to steep for 30 minutes, letting the floral aromas infuse.
- 5.
After steeping, strain the mixture through a fine mesh sieve into a clean fermentation vessel, discarding the petals.
- 6.
Stir in the pomegranate juice and vanilla extract, then allow the mixture to cool to room temperature.
- 7.
Once cooled, sprinkle the champagne yeast on top and gently stir to incorporate.
- 8.
Cover the fermentation vessel with a clean cloth and secure it with a rubber band to allow gases to escape while preventing contaminants.
- 9.
Let it ferment in a cool, dark place for 4-6 weeks, stirring gently every few days.
- 10.
After fermentation is complete, bottle the mead, leaving some space at the top. Seal with corks and age for at least 2-3 months for best flavor.
- 11.
Serve chilled, garnished with fresh pomegranate seeds for an added touch of elegance.
