Fajita Noodle Omelette

- 8 ounces Fajita-style noodles
- 1 lb raw meat (chicken, beef, or tofu)
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- ¼ cup soba sauce
- 2 tomatoes, diced
- 4 large eggs
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)

Cook the fajita-style noodles according to package instructions. Drain and set aside.

In a large skillet, heat the vegetable oil over medium-high heat. Add the raw meat and cook until browned and cooked through. Remove from the skillet and set aside.
