Farewell Feast

A savory lamb dish with creamy cheese and butter, paired with juicy tomatoes and earthy mushrooms seasoned with a blend of fresh herbs. The perfect comforting meal for a bittersweet farewell gathering.

- 1 lb lamb shoulder, cubed
- 1/2 cup crumbled feta cheese
- 1/4 cup unsalted butter
- 4 medium tomatoes, diced
- 8 oz mushrooms, sliced
- 2 tbsp chopped fresh rosemary
- 2 tbsp chopped fresh thyme
- Salt and pepper to taste

Preheat oven to 375°F.

Season lamb with salt and pepper. Heat a large skillet over medium-high heat and add lamb, cooking until browned on all sides. Remove from skillet and place in a baking dish.

In the same skillet, add butter and mushrooms. Cook until mushrooms are softened. Add tomatoes, rosemary, and thyme, and cook for another 5 minutes.

Pour the mushroom and tomato mixture over the lamb in the baking dish. Sprinkle feta cheese over the top.

Cover the dish with foil and bake in the oven for 30 minutes. Remove the foil and bake for another 10 minutes or until cheese is melted and bubbly.
