- 3 lbs whole chicken
- 3 tbsp olive oil
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 cloves garlic, minced
- 1 lemon, halved
- Salt and pepper to taste
- 2 lbs potatoes, peeled and cubed
- ½ cup milk
- 4 tbsp butter
- 1 lb mixed seasonal vegetables (carrots, zucchini, bell peppers)
- 2 tbsp balsamic vinegar
- 8 oz dark chocolate, chopped
- 2 cups heavy cream
- 3 tbsp sugar
- 2 egg whites

Preheat the oven to 375°F.

Rub the chicken with olive oil, garlic, rosemary, thyme, salt, and pepper. Squeeze lemon over the chicken and place the halves inside.

Roast chicken in the oven for about 1.5 hours or until juices run clear and internal temperature reaches 165°F.

Meanwhile, boil potatoes in salted water until tender, about 15 minutes. Drain and mash with milk, butter, salt, and pepper.
