Greg Nog Pancakes
ingredients
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup egg nog
- 1/4 cup grape juice
- 1/4 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Cooking sprayFor Grape Syrup:
- 1 cup grape juice
- 1/4 cup granulated sugar
- 1 teaspoon cornstarch
steps
- 1.
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- 2.
In a separate bowl, whisk the egg nog, grape juice, milk, egg, and melted butter until well blended.
- 3.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; a few lumps are okay.
- 4.
Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray.
- 5.
Using a 1/4 cup measuring cup, pour the batter onto the skillet. Cook until bubbles appear on the surface, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter, adding more cooking spray as needed.
- 6.
For the grape syrup, combine the grape juice, sugar, and cornstarch in a small saucepan. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil. Remove from heat.
- 7.
Serve the Greg Nog pancakes warm, drizzled with the grape syrup.
