Festive Plantain Chicken Medley

This colorful and nutritious dish combines tender chicken with golden plantains, vibrant peppers, and a mix of crunchy vegetables like cauliflower, broccoli, and carrots. Sautéed in rich butter ghee and avocado oil, this healthy medley is a feast for both the eyes and the palate. - 2 ripe plantains, sliced
- 1 lb chicken breast, cubed
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tbsp butter ghee
- 1 cup cauliflower florets
- 1 cup carrots, chopped
- 1 cup broccoli florets
- 2 tbsp avocado oil
- 4 cups Romanian lettuce, chopped
- 1 cup celery, sliced
- Salt and pepper to taste

Heat 1 tbsp of butter ghee in a large skillet over medium heat.

Add the cubed chicken and season with salt and pepper. Sauté until cooked through, about 6-8 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add another tbsp of butter ghee. Sauté the sliced plantains until golden and caramelized, about 3-5 minutes on each side. Remove and set aside.

In the same skillet, add avocado oil and toss in the sliced peppers, cauliflower, broccoli, and carrots. Sauté for about 5-7 minutes until tender-crisp.

Return the chicken and plantains to the skillet, mixing everything together. Cook for an additional 2 minutes to heat through.

Serve the chicken and vegetable medley on a bed of chopped Romanian lettuce and celery. Enjoy warm!
