Yule Hearth Ale

Yule Hearth Ale
ingredients
- 5 gallons of water
- 8 lbs of light brown sugar
- 1 lb of molasses
- 1 oz of whole ground ginger
- 1 oz of whole cloves
- 1 oz of whole allspice
- 1 oz of whole cinnamon
- 1 oz of ground cardamom
- 1 cup of chopped candied ginger
- 1 cup of chopped candied lemon peel
- 1 cup of chopped candied orange peel
- 1 cup of raisins
- 1 cup of chopped almonds
- 1 cup of chopped walnuts
- 1 cup of chopped pitted dates
- 1 packet of Wyeast 1056 American Ale yeast
- 1 tsp of yeast nutrient

In a large brew kettle, heat 5 gallons of water.

Once warmed, add the light brown sugar and molasses, stirring until fully dissolved.

Gradually incorporate the ground spices, and bring to a gentle boil.
- 4.
Reduce heat and simmer for 30 minutes to allow the flavors to meld.
- 5.
Remove from heat and add in the chopped candied ginger, lemon peel, orange peel, raisins, almonds, walnuts, and dates.

Cool the mixture to around 70°F and transfer to a sanitized fermentation vessel.
- 7.
Add the Wyeast 1056 American Ale yeast and yeast nutrient, stirring gently to mix.
- 8.
Seal the fermentation vessel and let it ferment in a cool, dark place for 2 weeks.
- 9.
Once fermentation is complete, bottle the ale with appropriate priming sugar, and let carbonate for an additional 2 weeks.
- 10.
Chill, serve, and enjoy your Yule Hearth Ale!
