- 1 packet Red Star Premier Classique (Montrachet) yeast
- 1 oz yeast nutrient
- 12 Ibs honey
- Zest of 4 large oranges
- 5 cinnamon sticks
- 12 cloves
- 10 slices fresh ginger
- 5 gallons water
- Champagne bottles

In a large pot, combine water, honey, orange zest, cinnamon sticks, cloves, and ginger. Bring to a boil, then simmer for 30 minutes.

Let the mixture cool to room temperature. Strain out the spices and transfer the liquid to a fermentation vessel.

Add Montrachet yeast and yeast nutrient to the vessel. Stir well to combine.

Cover the vessel with a lid or airlock and let it ferment for 2-3 weeks.

Once fermentation is complete, bottle the mead in champagne bottles and let it age for at least 6 months before serving.
