A hearty and colorful dinner loaded with fiber. Spicy black beans, grilled veggies, and avocado salsa on a bed of quinoa.
ingredients
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 avocado, diced
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp cumin
- Salt and pepper to taste

Cook quinoa according to package instructions.

In a skillet, sauté peppers and onions in olive oil.

Add black beans, cumin, salt, and pepper to the skillet.
