Fiery Red Pepper Spread

- 6 red bell peppers
- 2 whole garlic bulbs
- 3 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- ½ teaspoon chili flakes
- Salt and black pepper, to taste

Preheat your oven to 400°F (200°C).

Cut the red bell peppers in half, remove the seeds and stems, and place them on a baking tray.

Slice off the top of the garlic bulbs, exposing the cloves, and drizzle them with a teaspoon of olive oil. Wrap the bulbs tightly in foil.

Brush the red bell peppers with 1 tablespoon of olive oil and sprinkle with salt and black pepper.

Place the baking tray with the peppers and the foil-wrapped garlic bulbs in the oven. Roast for 30-40 minutes or until the peppers are charred and the garlic is soft and golden.

Remove the tray from the oven and let the peppers cool before peeling off the skin.

Squeeze the roasted garlic cloves out of their skins and add them to a blender or food processor.

Add the roasted red peppers, tomato paste, smoked paprika, chili flakes, 2 tablespoons of olive oil, and a pinch of salt and black pepper to the blender/food processor.

Blend until you achieve a smooth and velvety consistency.

Taste and adjust the seasoning if needed.
