Fiery Veggie Pretzel Burger

- 4 pretzel buns
- 1 ripe avocado, sliced
- 1 cup roasted red peppers, sliced
- 4 lettuce leaves
- 4 slices of Monterey Jack cheese
- 1/4 cup mayonnaise
- 2 tablespoons chipotle in adobo sauce
- Vegetable oil, for grillingFor the veggie patty:
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste

Preheat your grill or stovetop grill pan to medium-high heat.

In a medium bowl, mash the black beans until mostly smooth. Add breadcrumbs, red onion, bell pepper, garlic, cilantro, lime juice, cumin, smoked paprika, salt, and pepper. Mix until well combined.

Divide the mixture into 4 equal portions and shape each portion into a patty, approximately 1/2-inch thick.

In a small bowl, combine mayonnaise and chipotle in adobo sauce. Set aside.

Lightly oil the grill grates or grill pan. Grill the veggie patties for about 4-5 minutes on each side, or until nicely charred and heated through. During the last minute of cooking, place a slice of Monterey Jack cheese on top of each patty to melt.

While the patties are grilling, slice the pretzel buns in half and lightly toast them.

Once the patties are done, remove them from the grill. Spread chipotle mayo on the bottom half of each bun.

Build the burger by placing a veggie patty on top of the chipotle mayo, followed by avocado slices, roasted red peppers, lettuce, and the top half of the pretzel bun.
