Figgy Cinnamon Swirl Rolls

Soft and fluffy vegan bread rolls filled with a sweet, gooey cinnamon and fresh fig filling. The perfect autumn-inspired treat for breakfast or dessert!

- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 teaspoons instant yeast
- 1/2 teaspoon salt
- 1 cup unsweetened almond milk, warmed
- 1/4 cup vegan butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh figs, diced
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon

In a large bowl, combine flour, sugar, yeast, and salt.

Pour in warm almond milk, melted butter, and vanilla extract. Stir to form a sticky dough.

Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.

Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour until doubled in size.

Punch down the dough to remove air bubbles, then roll it out into a rectangle shape.

In a small bowl, mix together the diced figs, brown sugar, and cinnamon. Spread this mixture evenly over the rolled out dough.

Roll the dough tightly, starting from one of the long sides, until you have a log shape.

Cut the log into 12 equal slices using a sharp knife. Place the slices onto a greased baking pan.

Cover the pan and let the rolls rise for another 30 minutes.

Preheat your oven to 350°F (180°C).

Bake the rolls for 20-25 minutes until golden brown and cooked through.
