- 3 garlic cloves

- 1 tbsp of coarse salt
- 1 tsp of raw cane sugar
- a pinch of ground pepper
- 1/2 litre of sunflower oil
- 2 whole eggs
- 1/2 tbsp of coarse mustard
- juice of half a lime
- 1 tsp of coarse salt
- a pinch of fresh ground pepper

Preheat grill over charcoal until hot. Place chile peppers, garlic, and ginger over flame, turning occasionally until slightly charred.

In a blender, blend grilled chiles, garlic, ginger, salt, sugar, and pepper until smooth. Set aside.

In a bowl, whisk eggs, mustard, lime juice, salt, and pepper. Slowly drizzle in sunflower oil while whisking until thickened.
