ingredients
- 1 cup peach puree (fresh or canned)
- 1 cup sugar (divided)
- 1 cup whole milk
- 1 cup heavy cream
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1 cup pecans, chopped
- 1 tablespoon butter
steps
- 1.
Preheat your oven to 350°F (175°C).
- 2.
In a saucepan, melt ½ cup of sugar over medium heat, stirring until it forms a light caramel. Quickly pour it into a flan mold or cake pan, swirling to coat the bottom evenly. Let it cool.
- 3.
In a blender, combine peach puree, milk, heavy cream, eggs, ½ cup sugar, vanilla extract, and cinnamon. Blend until smooth.
- 4.
Pour the peach mixture over the cooled caramel in the mold.
- 5.
Place the mold in a larger baking dish and fill the dish with hot water until it reaches halfway up the sides of the mold, creating a water bath.
- 6.
Bake for 50-60 minutes or until the flan is set and a knife inserted comes out clean.
- 7.
Remove from the oven and let it cool at room temperature. Refrigerate for at least 4 hours or overnight.
- 8.
In a skillet, melt the butter and add the chopped pecans with the remaining ½ cup of sugar, cooking until the pecans are toasted and caramelized. Let cool.
- 9.
Unmold the flan onto a serving platter. Top with the caramelized pecans before serving.
