Savory Ground Turkey Mushroom Skillet
ingredients
- 1 pound ground turkey
- 1 cup mushrooms, sliced
- 1 cup spinach, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes (optional)
- 3 tablespoons olive oil
- Salt and pepper to taste
- ¼ cup feta cheese, crumbled
- Fresh parsley, for garnish
- 1 cup quinoa or brown rice pasta (cooked, for serving)

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced mushrooms and season with salt and pepper. Sauté for about 5-7 minutes until tender and slightly browned.

Push the mushrooms to one side of the skillet. Add the remaining olive oil and diced onion. Sauté for 3-4 minutes until the onion is translucent.

Add minced garlic and cook for another minute until fragrant.

Increase the heat to medium-high and add ground turkey to the skillet. Break it apart and cook until browned and fully cooked, about 5-7 minutes.

Stir in smoked paprika, cumin, oregano, and red pepper flakes (if using). Mix well and let cook for another 2 minutes.

Add chopped spinach, mixing to wilt it down for about 2 minutes.

Taste and adjust seasoning if necessary. Remove from heat, sprinkle with feta cheese, and garnish with fresh parsley before serving over cooked quinoa or brown rice pasta.
