- 1 cup brewed coffee, cooled
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup chopped prunes
- ¼ cup chopped walnuts (optional)
- 1 tbsp flax seeds, for topping
