Strawberry Blueberry Melomel

ingredients
- 2 cups ripe strawberries, hulled and sliced
- 2 cups fresh blueberries
- 4 cups water
- 2 cups almond blossom honey
- 1/4 teaspoon champagne yeast
- 1/2 cup lemon juice (about 3 lemons)
- 1 teaspoon cinnamon (optional)
- A few sprigs of fresh mint for garnish (optional)

In a large pot, bring the water to a gentle boil.

Remove from heat, then add the almond blossom honey, stirring until completely dissolved.

Allow the honey-water mixture to cool to room temperature.

Once cooled, add the lemon juice and sprinkle the champagne yeast on top.

Gently mix in the strawberries and blueberries, taking care not to crush them too much.

Cover the pot with a clean cloth and let it ferment at room temperature for about 5 to 7 days.

After fermentation, strain the mixture through a fine mesh sieve into a clean glass carboy, discarding solids.

Seal the carboy with an airlock and let it ferment for another 2-4 weeks, until bubbling stops.

Bottle the mead and refrigerate for a couple of days before serving.
