Elysian Mead

ingredients
- 2 Bosc Pears, chopped
- 2 g Rose Petals
- 4.5 g Cardamom
- 2.3 g Clover Blossoms
- 9 g Holy Basil
- 1 cup Oats, not husked
- Cote De Blanc Yeast (as per package instructions)
- 1 gallon Water
- 0.5 cup Honey (optional, for sweetness)

In a sanitized fermenter, add the chopped Bosc pears and oats.

In a separate bowl, steep the rose petals, cardamom, clover blossoms, and holy basil in 1 cup of hot water for 10 minutes.

Strain the steeped herbs into the fermenter using a fine sieve or cheesecloth, discarding the solids.

Pour an additional gallon of cooled water into the fermenter and add honey if desired for sweetness.

Sprinkle the Cote De Blanc yeast over the mixture, stirring gently to combine.

Cover the fermenter with an airlock and store it in a dark, cool space, allowing it to ferment for 2-3 weeks.

Once fermentation is complete, siphon the mead into bottles, leaving sediment behind.

Allow the mead to carbonate and mature in bottles for at least another month before tasting.
