Lavender ’n Passion Fruit Mead

- 3 pounds honey (preferably wildflower or clover)
- 1 quart water (plus more for dilution)
- 2 cups passion fruit puree (fresh or frozen)
- 1 tablespoon dried culinary lavender
- 1 packet mead yeast (like Lalvin D-47 or EC-1118)
- 1 teaspoon yeast nutrient
- 1 cup sugar (for secondary fermentation, optional)
- 1 lemon (juiced)

In a large pot, combine 1 quart of water and honey, heating gently until honey dissolves completely.

Once dissolved, remove from heat and add another quart of cool water to bring the mixture to room temperature.

Stir in the passion fruit puree, lemon juice, and dried lavender.

Allow the mixture to steep for about 30 minutes, then strain out the lavender.

Pour the liquid into a sanitized fermentation vessel, ensuring there’s ample headspace.

Rehydrate the yeast according to package instructions, then add it to the vessel along with the yeast nutrient.

Seal the vessel with an airlock and ferment in a cool, dark place for 4 to 6 weeks, or until bubbling stops.

If desired, add sugar to the mead for sweetness during secondary fermentation.
- 9.
Bottle the mead, taking care to leave sediment behind. Let it age for at least 3 months before tasting; the flavors will meld beautifully over time.
