- 2 cups alfalfa honey
- 1 cup dried chamomile flowers
- 1 teaspoon yeast (preferably mead yeast)
- 1/2 lemon, juiced (optional for added brightness)
- 1/4 teaspoon cinnamon (optional for warmth)

In a large pot, bring the water to a boil, then reduce heat to a simmer.

Stir in the alfalfa honey until it fully dissolves, creating a sweet syrup.
