Fragrant Persian Shrimp with Rice

- 1 lb large shrimp, peeled and deveined
- 1/4 cup olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1/4 tsp saffron threads
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp paprika
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 cups basmati rice
- 4 cups water or broth
- 1/2 cup golden raisins
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, cut into wedges for serving

In a bowl, combine shrimp with olive oil, onion, garlic, saffron, cumin, coriander, paprika, salt, and pepper. Marinate for at least 30 minutes.

Rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes.

In a pot, bring 4 cups of water or broth to a boil. Add the soaked rice and cook for about 10-12 minutes. Drain and set aside.
