A refreshing pasta dish filled with vibrant veggies like zucchini, asparagus, and mushrooms, tossed in a flavorful tomato basil sauce with succulent cooked chicken. A perfect meal for a light and satisfying dinner.
ingredients
- 8 oz angel hair pasta
- 1 zucchini, sliced
- 1 bunch asparagus, chopped
- 8 oz mushrooms, sliced
- 1 lb cooked chicken, shredded
- 1 can Cream of Mushroom soup
- 1 cup milk (dairy or non-dairy)
- 1 can diced tomatoes
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Olive oil

Cook pasta according to package instructions, drain and set aside.

In a large skillet, heat olive oil and sauté zucchini, asparagus, and mushrooms until tender.

Add in the cooked chicken, Cream of Mushroom soup, milk, diced tomatoes, basil, salt, and pepper. Stir well.
