Lemon Basil Chicken with Chickpeas

- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lemon juice
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 2 cups cooked chickpeas
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Zest of 1 lemon

In a large bowl, combine lemon juice, basil, garlic, salt, and black pepper. Add chicken breasts and toss to coat. Allow to marinate in the fridge for 30 minutes.
