Decadent Quinoa Brownies with a Creamy Twist
ingredients
- 1 cup cooked quinoa
- 1 cup unsweetened cocoa powder
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup dark chocolate chips
- 1/4 teaspoon xanthan gum

Preheat the oven to 350°F (180°C) and lightly grease a square baking dish.

In a blender or food processor, combine cooked quinoa, cocoa powder, honey, eggs, vanilla extract, salt, and xanthan gum. Blend until smooth.

Fold in the dark chocolate chips into the batter.

Pour the batter into the greased baking dish and spread evenly.

Bake for 25-30 minutes or until the edges are firm and the center is set, being careful not to overbake for a fudgy texture.
