Hallertau Acacia Honey Beer

Brew a refreshing Golden Acacia Honey Beer that melds the delicate flavors of Acacia honey with rich Vienna malt. - 4.5 lbs Acacia honey
- 2.25 lbs Vienna light malt extract
- 1 oz Hallertau hops
- 1 packet Red Star Premier Cuvée yeast
- 1 packet Lalvin K1-V1116 yeast (optional for blending)
- 5 gallons water

In a large pot, bring 2 gallons of water to a boil.

Remove from heat and stir in the Vienna malt extract until fully dissolved.

Add the Acacia honey and stir well to combine.

Return to heat, bringing the mixture back to a gentle boil.

Add half of the Hallertau hops and boil for 15 minutes.

After 15 minutes, add the remaining hops and boil for an additional 15 minutes.

Remove the pot from heat and cool the wort quickly using an immersion chiller or an ice bath.

Transfer the cooled wort to a sanitized fermenter and add enough water to reach a total volume of 5 gallons.

Pitch the yeast into the fermenter and seal with an airlock.

Ferment at 65-75°F for 1-2 weeks or until fermentation appears complete.

Bottle the beer with priming sugar for carbonation and let it condition for 2-3 weeks.
