Crystal Honey Wheat Beer

- 6.5 lbs. White Wheat Malt
- 2.5 lbs. Pilsner Malt
- 1 lb. Crystal Malt (40L)
- 0.5 lb. Honey (local and raw recommended)
- 1 oz. Saaz Hops (bittering, 60 minutes)
- 0.5 oz. Saaz Hops (flavor, 15 minutes)
- 1 packet of Belgian Witbier Yeast (or your favorite wheat yeast)
- 5 oz. Corn Sugar (for priming)
- 5 gallons of filtered water

Begin by heating 3.5 gallons of water to 160°F (71°C) and add the grains to create a mash.

Maintain the mash temperature at 152°F (67°C) for 60 minutes, then sparge with an additional 3 gallons of water at 170°F (77°C).

Collect around 6-6.5 gallons of wort and bring to a boil.
- 4.
Add 1 oz. of Saaz hops and boil for 60 minutes.
- 5.
After 45 minutes, add 0.5 oz. Saaz hops and stir in the honey until fully dissolved.
- 6.
Chill the wort quickly to around 70°F (21°C) and transfer it to a sanitized fermentation vessel.
- 7.
Pitch the yeast according to package instructions and seal with an airlock.
- 8.
Allow the beer to ferment for 7-14 days or until fermentation is complete.
- 9.
Prepare priming sugar by boiling with 2 cups of water, cool, and add to the beer.
- 10.
Bottle your beer and let it carbonate for about 2 weeks in a cool, dark place.
