- 6 lbs Wheat Malt
- 4 lbs Pale Malt
- 1 lb Honey (preferably clover honey)
- 0.5 lb Flaked Wheat
- 1 oz Hallertau Hops (bittering)
- 0.5 oz Citra Hops (aroma, 15 minutes)
- 0.5 oz Mosaic Hops (aroma, 5 minutes)
- American Wheat Yeast (Wyeast 1010 or similar)
- 1 Whirlfloc tablet (optional, for clarity)
- 5 oz priming sugar (for bottling)
- Water to make 5 gallons

Heat 3.5 gallons of water in a brew kettle to 165°F (74°C).

Add the wheat malt, pale malt, and flaked wheat to the mash tun.
- 3.
Maintain mash temperature at 152°F (67°C) for 60 minutes, stirring occasionally.
- 4.
Sparge with water to collect roughly 6.5 gallons of wort, then bring to a boil.
- 5.
Once boiling, add the Hallertau hops and boil for 60 minutes.
- 6.
With 15 minutes left, add the Citra hops and Whirlfloc tablet (if using).
- 7.
At the last 5 minutes, add the Mosaic hops and then remove from heat.

Cool the wort quickly using a wort chiller to 70°F (21°C).
- 9.
Transfer to a sanitized fermenter and add honey, stirring gently to mix.
- 10.
Pitch the yeast and ferment for 1-2 weeks at 68°F (20°C).
- 11.
Once fermentation is complete, bottle with priming sugar and let carbonate for 1-2 weeks.
