Sweet and Tangy Tofu Stir Fry
ingredients
- 1 lb firm tofu, cubed
- 1 large onion, sliced
- 1 bell pepper, thinly sliced
- 2 cups bean sprouts
- 3 cloves garlic, minced
- 2-inch piece ginger, grated
- 3 tablespoons coconut aminos
- 2 tablespoons tamari sauce
- 1 tablespoon maple syrup
- 1 tablespoon arrowroot powder
- 2 tablespoons sesame oil
- Salt and pepper, to tasteOptional: sliced green onions and sesame seeds for garnish

In a bowl, combine minced garlic, grated ginger, coconut aminos, tamari sauce, maple syrup, and arrowroot powder. Mix well.

Add the tofu cubes to the marinade and let it sit for 20 minutes to absorb the flavors.

Heat sesame oil in a large skillet or wok over medium-high heat. Add the marinated tofu cubes to the skillet, reserving the excess marinade, and cook until golden and crispy. Remove the tofu from the skillet and set aside.

In the same skillet, add the sliced onion and bell pepper. Stir-fry until they begin to soften, about 2 minutes.

Add the bean sprouts to the skillet and continue stir-frying for another 2 minutes.

Return the tofu to the skillet and pour in the reserved marinade. Cook for an additional 2 minutes, allowing the sauce to thicken and coat the tofu and vegetables.

Season with salt and pepper to taste. Stir well to combine.

Remove from heat and garnish with sliced green onions and sesame seeds if desired.
- 9.
Serve hot over steamed rice or noodles.
