- 2 oz Hallertau hops (bittering)
- 1 oz Saaz hops (flavoring)
- 1 tsp cinnamon
- 1 tsp ginger (dried)
- 1/2 tsp nutmeg
- 1 packet of ale yeast (such as Safale US-05)
- 5 gallons water (filtered or spring)
steps
- 1.
In a large brew kettle, bring 3 gallons of water to a boil.
- 2.
Stir in the liquid malt extract, ensuring it fully dissolves.
- 3.
Add Hallertau hops and boil for 60 minutes, stirring occasionally.
- 4.
At the last 15 minutes of the boil, add corn sugar, honey, cinnamon, ginger, and nutmeg.
- 5.
After boiling, cool the wort quickly using a wort chiller or an ice bath.
- 6.
Once cooled, transfer to a sanitized fermenter and add remaining water to reach 5 gallons.
- 7.
Pitch the ale yeast and seal with an airlock, allowing it to ferment at 68-72°F for 1-2 weeks.
- 8.
Once fermentation is complete, siphon into bottles, leaving some space, and cap them securely.
- 9.
Let the bottles condition in a cool, dark place for an additional 2-4 weeks before enjoying.
