Honey Corn Lager

ingredients
- 9 lbs Pale Malt
- 2 lbs Flaked Corn
- 1 lb Honey (preferably wildflower or clover)
- 1 lb Caramel/Crystal Malt (40L)
- 1 oz Hallertau Hops (bittering)
- 1 oz Saaz Hops (aroma)
- 1 package Lager Yeast (like Wyeast 2124)
- Priming sugar (for bottling)
- 5 gallons of spring or filtered water

In a large pot, heat 3 gallons of water to 165°F (74°C) for mashing.

Add the Pale Malt, Flaked Corn, and Caramel Malt. Stir well and maintain a mash temperature of 150°F (65°C) for 60 minutes.

After mashing, sparge with 170°F (77°C) water until you collect about 6.5 gallons of wort.
- 4.
Bring the wort to a boil, adding Hallertau hops at the beginning and Saaz hops in the last 15 minutes.

Stir in the honey when the boiling is complete and remove from heat.
- 6.
Chill the wort to around 65°F (18°C) and transfer to a sanitized fermentation vessel.
- 7.
Pitch the lager yeast and seal with an airlock, fermenting at 50–55°F (10–13°C) for 2-3 weeks.
- 8.
Once fermentation is complete, proceed to bottle with priming sugar, then let them carbonate for another 2 weeks.
