ingredients
- 10 lbs Pilsner Malt
- 2 lbs Crystal Malt (60L)
- 1 oz Northern Brewer hops (bittering)
- 1 oz Cascade hops (flavor)
- 1 oz Cascade hops (aroma)
- 1 packet American Ale yeast (Safale US-05 or similar)
- 5 oz corn sugar (for priming)
- 1 tsp Irish moss (optional, for clarity)
- 5 gallons of filtered water

Begin by heating 3 gallons of water to 165°F; add crushed Pilsner and Crystal malts to mash tun.

Maintain mash at 153°F for 60 minutes, then sparge with an additional 3 gallons of water at 170°F.
- 3.
Bring wort to a rolling boil and add Northern Brewer hops; boil for 60 minutes.

With 15 minutes left, add Irish moss (if using) and Cascade hops for flavor.
- 5.
Once boiling is complete, cool the wort quickly to around 70°F using an immersion chiller.
- 6.
Transfer cooled wort to a sanitized fermentation vessel and top off with enough water to complete 5 gallons.
- 7.
Pitch the yeast and seal the fermentation vessel with an airlock.
- 8.
Allow fermentation to proceed for 1-2 weeks, until bubbling slows.
- 9.
Once fermentation is complete, prepare priming solution with boiled corn sugar and a cup of water, cool, and add to bottling bucket.
- 10.
Carefully transfer beer to the bottling bucket, then bottle and cap.
- 11.
Let carbonate for 1-2 weeks at room temperature before enjoying.
