This sweet and fruity wine is made with golden raisins, dates, and a hint of lemon. Perfect for sipping on a hot summer day or pairing with cheese and charcuterie.

- ½ lb. dates
- Zest and juice of 2 lemons
- 2 ½ lbs. very fine granulated suger
- 1 tsp. yeast nutrient
- ½ tsp. yeast energizer
- 1 campden tablet
- ¾ gal. water
- Lalvin EC-1118 yeast

In a large pot, combine water, sugar, raisins, dates, lemon zest, and juice. Bring to a boil, then let simmer for 30 minutes.

Remove from heat and let cool to room temperature. Crush campden tablet and sprinkle over mixture.
- 3.
Sprinkle yeast nutrient and energizer over the liquid. Let sit for 24 hours.
- 4.
Add Lalvin EC-1118 yeast to the mixture and stir well. Cover and let ferment for 2 weeks, stirring daily.
- 5.
Strain mixture through a cheesecloth into a clean container. Let sit for an additional 4 weeks.
- 6.
Bottle the wine and let age for at least 6 months before enjoying.
