ingredients
- ½ lb onions, finely chopped
- ½ lb potatoes, peeled and cubed
- 1 lb golden raisins, chopped
- 1 cup honey
- 1 tsp yeast nutrient
- 2 tsp acid blend
- 1 campden tablet, crushed
- 1 packet wine yeast
- Water, enough to reach desired volume
steps
- 1.
In a large pot, bring enough water to a boil to cover the potatoes and onions. Add the chopped onions and cubed potatoes, cooking until soft (about 15 minutes). Once cooked, drain the vegetables and transfer them to a fermentation vessel.
- 2.
In the same pot, combine the chopped golden raisins and honey with enough water to fully dissolve the honey over low heat. Stir in the yeast nutrient and acid blend. Allow to cool before adding the crushed campden tablet.
- 3.
Pour the sweetened raisin mixture over the cooked vegetables in the fermentation vessel. Top up with water until the desired volume is reached, ensuring all ingredients are submerged.
- 4.
Sprinkle the packet of wine yeast on top and gently stir to combine. Seal the fermentation vessel with an airlock and store in a dark, warm place for 1-2 weeks, stirring daily.
- 5.
When fermentation has slowed, siphon the brewed liquid off the sediment into clean bottles, corking them securely. Allow to age for at least a month before enjoying your unique golden raisin onion potato mead!
