- 3 lbs parsnips
- 1 lb raisins
- 3 ½ cups honey
- ½ tsp yeast energizer
- 4 oranges, juiced
- ¼ tsp tannin
- 1 campden tablet
- 1 packet mead yeast

Peel and chop the parsnips into small cubes, then boil in salted water until tender.

Drain the parsnips and transfer them to a large mixing bowl, mashing them until smooth. Let cool.

In a separate bowl, mix the raisins with warm water for about 15 minutes, then drain.

Stir the honey, orange juice, tannin, and yeast energizer into the cooled parsnip puree until well combined.
