Golden Sunset Creme Brulee

- 4 large egg yolks
- 1/4 cup granulated sugar
- 1 3/4 cups heavy cream
- 1 vanilla bean
- 4 tablespoons brown sugar
- Pinch of salt

Preheat the oven to 325°F (163°C).

In a mixing bowl, whisk together the egg yolks and the granulated sugar until well combined and slightly thickened.

In a saucepan, heat the heavy cream over medium-low heat. Split the vanilla bean lengthwise, scrape the seeds, and add both the seeds and the bean to the cream. Bring to a gentle simmer.

Gradually pour the hot cream into the egg mixture while whisking constantly. Once fully combined, remove the vanilla bean.

Divide the custard mixture among four ramekins and place them in a large baking dish. Fill the dish halfway up the sides of the ramekins with warm water to create a water bath.

Carefully transfer the baking dish to the preheated oven and bake for 30-35 minutes until the custard is set but still slightly jiggly in the center.

Remove the ramekins from the water bath and let them cool. Once cooled, cover and refrigerate for at least 2 hours, or overnight for better results.

Just before serving, evenly sprinkle a tablespoon of brown sugar over each chilled custard. Caramelize the sugar using a culinary torch or by placing the ramekins under a broiler until golden and bubbly.
