- Honey: 4 pounds Monarch's Choice Wildflower Honey
- Finings: Irish moss

- Tannins: Wine Tannin (per pkg instructions)
- Yeast: ½ pkg Wyeast 4184 Sweet Mead Yeast

Sanitize all equipment thoroughly to ensure a clean fermentation process.

In a large pot, heat 0.5 gallons of water and dissolve the wildflower honey, stirring gently until fully incorporated.

Bring the mixture to a gentle boil and add in the Irish moss for fining. Boil for about 20 minutes, then remove from heat.

Cool the mixture rapidly by placing the pot in an ice bath or allowing it to sit until it reaches room temperature.

Transfer the cooled honey-water mixture to a sanitized fermentation vessel, and add the remaining 0.75 gallons of water to reach the desired volume.

Add the yeast nutrient, acid blend, and wine tannin following the package instructions, mixing well.
