- 1 gallon filtered water
- 1 packet mead yeast (such as Lalvin 71B or EC-1118)
- 1 teaspoon yeast nutrient
- 1 teaspoon tannin (optional)
- 1 cinnamon stick (optional, for added spice)
- Zest of 1 lemon (for brightness)
