Spicy Masala Green Banana Coconut Curry

- 4 green bananas, peeled and sliced
- 1 can (13.5 oz) coconut milk
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2-4 green chilies, slit (adjust to taste)
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp garam masala
- 1 tsp red chili powder (adjust to taste)
- 2 tbsp vegetable oil
- Salt, to taste
- Fresh cilantro, for garnish
- 2 cups whole wheat flour (for chapati)
- Water, as needed (for dough)

In a bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead into a smooth dough. Cover and let it rest for at least 30 minutes.

Heat vegetable oil in a large pan over medium heat. Add mustard seeds and cumin seeds; let them sizzle.

Stir in the chopped onion, sauté until translucent, then add minced garlic, grated ginger, and slit green chilies. Cook for a few minutes until fragrant.

Add the sliced green bananas, turmeric powder, garam masala, red chili powder, and salt. Sauté for 5 minutes, allowing the bananas to absorb the spices.

Pour in the coconut milk, bring to a gentle simmer, and cook for 10-15 minutes until the bananas are tender and the curry thickens.
