Healthy and satisfying Buddha bowl with grilled chicken and sweet potatoes.
ingredients
- 1/2 lb chicken breasts, sous vide according to Joul
- 1 cup quinoa, rinsed
- 1 cup sweet potato, diced cooked with Chefiq.
- 1 cup spinach
- 1 red bell pepper, sliced
- Salt and pepper to taste
steps
- 1.
Sous Vide chicken until cooked to desire temperature. Recommend 140/2-3 hours
- 2.
Cook quinoa in a rice cooker with 2 cups of water.
- 3.
Sauté sweet potatoes and red bell peppers until tender.
- 4.
Divide quinoa, spinach, veggies, and chicken into two bowls.
- 5.
Season with salt and pepper.
- 6.
Cool, then refrigerate for quick meals.
