Grilled Veggie Skewers

Delicious grilled vegetable skewers with a tangy BBQ marinade.
ingredients
- 1 large red bell pepper
- 1 large green bell pepper
- 1 medium red onion
- 2 small zucchinis
- 8 cherry tomatoes
- 8 button mushrooms
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons tomato paste
- 1 tablespoon maple syrup
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon smoked paprika

Preheat the grill to medium-high heat.

In a small bowl, whisk together tomato paste, maple syrup, soy sauce, apple cider vinegar, Dijon mustard, and smoked paprika to make the BBQ marinade.

Cut the vegetables into chunks or slices.

Thread the vegetables onto metal or soaked wooden skewers, alternating the colors and variety of vegetables.

Brush the skewers with olive oil and season with salt and pepper.

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.

During the last 5 minutes of grilling, generously brush the skewers with the BBQ marinade.

Remove the skewers from the grill and let them sit for a couple of minutes before serving.
